    Tasty Tomato Pie

    A few months ago, I planted four tomato plants: two roma, one vine-ripened, and one lemon boy. For the last two weeks, I have been trying to come up with as much variety in tomato recipes that I can!! I have made roasted tomatoes, fried green tomatoes, spaghetti sauce, and tomato pie. We love the tomato pie so much that I wanted to share it with you. I use a mix of roma, vine-ripened, and lemon boys but you can use whatever tomatoes you like!

    Buy a pre-made pie crust. I used Pillsbury. You can find a pack of two in the refrigerator section of your local grocery store (thanks Lizzybee!). Spread the dough out onto a pie pan and lightly glaze with evaporated milk. You could also use egg whites. Bake that for five minutes in a 450 degree oven. I usually just set that aside once it's done baking.

    Cut up about two cups of tomatoes. I slice them then quarter the slices. Place those tomatoes in the pie crust. Sprinkle dried basil over the tomatoes along with salt and pepper to taste. In a bowl, mix 1/2 cup of mayonnaise, 1/2 cup of parmesan, and one chopped clove of garlic. Spread this over the tomatoes in the pie crust. Finally, sprinkle mozarella cheese over the whole pie. Place it in a 350 degree oven for 30 minutes. You may broil it for a minute after it's been in the oven for 30 minutes. This will brown the mozarella. 

    Although this doesn't fit into the Skinny Bitch guidelines for being healthy, it sure is tasty...and you can have a small piece. Enjoy! Leave a comment below and let me know what you think!!
